Soda Cracker Crust Strawberry Pie

I've written so many serious posts in the last five months - thank you for the many comments of support, comfort, and encouragement. Thank you for sharing your stories with me and allowing me to pray for you and with you.

 

Thought I'd post something light and totally meaningless tonight - but something totally delicious - the recipe for my favorite pie! We've been making Soda Cracker Crust Strawberry Pie in my family for more than 40 years - enjoy! And as you prepare and eat this fabulous pie, breathe a prayer of gratitude to God who gives us sweetness even in dark days.

 

Soda Cracker Crust Strawberry Pie

 

Crust:
3 stiffly beaten egg whites
1 C sugar
12 finely rolled Saltines
½ t baking powder
1 t vanilla
½ C chopped nuts (almonds, walnuts or pecans)

 

Filling:
A pint and a half of sliced strawberries or 4-5 sliced peaches

 

Topping:
1 pint heavy cream, whipped
¼ C powdered sugar

 

Slowly blend the sugar into the beaten egg whites; add other ingredients and gently fold into egg whites. Butter a 9” pie pan and spoon the egg white mixture into the pie pan, gently creating a pie shape. Bake at 350 for 25-30 minutes. Cool crust completely. Slice a pint and a half of strawberries into crust and top with sweetened whipped cream. Chill the pie before serving.
